I only started eating Courgettes in the last year or so but I really like them, like hot cucumbers they are really nice. Completely Primal & Paleo friendly. Turkey is obviously a great choice, high quality protein and low in fat and calories. All good. It’s really filling too.
So you will need for one person:
A Courgette
Quarter Punnet of Turkey Mince
A Carrot
A Celery Stick
Quarter Onion
Garlic
Mint
Basil
Cumin
Cinnamon
What you need to do:
Pre heat your oven to 180C
First chop your carrot, celery, onion, garlic and pop it in a wok or frying pan with some coconut oil or your oil of choice.
Chop your Courgette in half and then scoop out the insides to create a little boat
Toss the bits you’ve scooped out in to the wok with the rest of your veggies. Add your spices and herbs to the Wok. Add your turkey mince to the wok too and let it brown off, moving it around every now and again.
Pop your hollowed out courgette in a oven proof dish and pile on the turkey mince mixture and pop it in the oven. 180C for around 20-25 minutes depending on your oven.
Once it’s baked in the oven serve it up, we had it with some tenderstem broccoli and it was completely gorgeous.










I loooove stuffed courgettes. I used to do ones stuffed with spicy lentils, very yummy!
Can I suggest you grate the onion and carrot? as it will make more of a sauce and adding a bit of tomato woudl be nice too!

I love courgettes…but hate cucumbers, weird eh? I’ve never thought of stuffing or filling them. I’ve stuffed peppers with turkey mince which is very nice.
I’ve made something similar with crabmeat – very yummy!
