I’ve seen this recipe in various incarnations across Paleo / Primal blogger land but most recently I bow once again to Ffion at Chocolate and Raspberries. Seriously people her food makes me more adventurous in my own life so I’m loving her Paleo change at the moment so go add her to your blog lovin’ or reader thingy if you want to eat good food.
You will need:
200 g Almond Flour
3 heaped tablespoons of apple sauce
Frozen fruit, its up to you how much but I used about a mug/cup worth
1 carrot grated
2 teaspoons of baking powder
chopped nuts – I recommend walnuts, however much you need
You can add a couple of teaspoons of honey or maple syrup if you like.
Pre heat the oven to 175 C.
I made my own apple sauce by blitzing some apples with cinnamon, then puree’d them and drained off the excess moisture through a seive. It took about 5 minutes and means no added sugar or chemicals that you might find in purchased apple sauce. I just used our usual apples.
Mix the eggs, almond flour, baking powder, apple sauce and cinnamon together in to a paste. Stir in your fruit, carrot, and nuts until they are evenly mixed, save some of the nuts for later. As it’s Autumn I used a frozen mixed forest fruits (cherrys, blackcurrents and blackberries).
Put the mix in to a loaf tin, I used a silicone one which I greased with a little coconut oil. Sprinkle a little chopped nuts over the top of the loaf. Pop in the oven for around 45 minutes, do a skewer test to see if it’s cooked through. I checked mine after 30 minutes and it was still really sloppy so it needed the full 45.
Cut it open and I recommend serving it with Paleo banana ice cream and a dollop of left over apple sauce or apple butter. Oh my it tastes amazingly, spectacularly good.
