Recipe: Great Healthy Homemade Tomato Soup

I love this syn free slimming world soup recipe, I make it fairly regularly and it’s so damn tasty both the boys wolf it down, plus there is mega potential for hidden veg if you have a kid (or grown up) who is not so veg friendly. I’ve made loads of tweeks to the original recipe I came across so I’m claiming this as my own.

You will need (serves 4)

500g Cherry Tomatoes
1 Can/Carton Passata
1 stock cube (veg or chicken) (made up as on package)
4 Celery Sticks Chopped
1 Red Pepper Chopped
3 Carrots Grated
Fresh Basil (if you can) chopped
2 Garlic Cloves finely chopped
2 tbsp Tomato Purée

Optional : Bacon Rashers, all visible fat removed, chopped and cooked.

What you need to do with it

First chuck all your tomatoes into a frying pan, you could add some 1 cal spray if you wanted to but it’s totally up to you. You need to blacken the tomatoes a little.

PhotobucketChuck all your tomatoes in to your slow cooker (If you haven’t got a slow cooker just put everything in to a big pan over a low heat with a lid on) and attack them with a masher to split them up a bit. Add the stock and all the rest of the ingredients (except the purée) to the pot including the lightly cooked bacon if you are using it.

Leave at least 4 hours on high, all day on low or if cooking in a pot until all the ingredients are soft.

Add the purée to the mix.

Blend the mix until it’s smooth and leave the lid off the pan for 30 minutes or so stirring occasionally so it thickens up. Season.

Serve really hot with some Healthy Extra bread or Rivita.  Devour.
